{"id":963895,"date":"2017-12-05T08:35:55","date_gmt":"2017-12-05T07:35:55","guid":{"rendered":"https:\/\/www.latelierdestephetlolie.com\/?p=963895"},"modified":"2017-12-05T09:10:09","modified_gmt":"2017-12-05T08:10:09","slug":"restaurant-loseille-paris-2eme","status":"publish","type":"post","link":"https:\/\/www.latelierdestephetlolie.com\/?p=963895","title":{"rendered":"Restaurant L&rsquo;Oseille Paris 2\u00e8me"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>Derni\u00e8rement, j&rsquo;ai eu le plaisir d&rsquo;\u00eatre invit\u00e9e par l&rsquo;agence\u00a0 <a href=\"https:\/\/www.commeuneimage.fr\/\"><strong>Comme une image<\/strong><\/a>\u00a0 \u00e0 aller d\u00e9couvrir le restaurant l&rsquo;Oseille, rue Saint Augustin \u00e0 Paris, dans le 2<sup>\u00e8me<\/sup> arrondissement.<\/p>\n<p>Ce tout jeune restaurant a ouvert en Ao\u00fbt 2017<\/p>\n<p>En cuisine, le chef <strong>Pierre Lecoutre<\/strong>, qui a choisi pour proposer une cuisine \u00ab\u00a0maison\u00a0\u00bb, et de travailler exclusivement avec des produits frais<\/p>\n<p><strong>Pierre Lecoutre<\/strong> a fait son apprentissage au R\u00e9gine&rsquo;s Paris, \u00e0 l&rsquo;Hotel de la Cloche \u00e0 Dijon, \u00e0 l&rsquo;Oasis \u00e0 la Napoule, puis au Jean Bardet \u00e0 Tours, il a ensuite pris son premier poste de Chef \u00e0 Singapour et \u00e0 Hong-Kong pour les H\u00f4tels M\u00e9ridien<\/p>\n<p>Il a ensuite tenu\u00a0l&rsquo;Atlantide \u00e0 Nantes (<strong>1 \u00e9toile Michelin<\/strong>), le D\u00f4me du Marais et le Caf\u00e9 des Mus\u00e9es \u00e0 Paris<\/p>\n<p><strong>L&rsquo;Oseille<\/strong> est un endroit chaleureux et convivial, avec une d\u00e9coration tout \u00e0 la fois actuelle et \u00ab\u00a0bistro\u00a0\u00bb tr\u00e8s sympa<\/p>\n<p>J\u2019ai \u00e9t\u00e9 accueillie par Julien, sympa aussi, comme toute l&rsquo;\u00e9quipe, \u00e0 qui j\u2019ai demand\u00e9 de \u00ab\u00a0visiter\u00a0\u00bb la cuisine avant de m\u2019installer<\/p>\n<p>Une cuisine gourmande \u00e0 partir de produis frais et locaux qui \u00e9volue au fil des saisons,<strong> Pierre Lecoutre<\/strong> privil\u00e9gie les producteurs ind\u00e9pendants passionn\u00e9s comme lui, respectueux de leurs terroirs qui proposent des produits de saison<\/p>\n<p>Au fond du restaurant, la cave \u00e0 vin est enti\u00e8rement vitr\u00e9e et rec\u00e8le quelques tr\u00e8s belles bouteilles<\/p>\n<p>Pour la petite histoire : le restaurant a \u00e9t\u00e9 ainsi nomm\u00e9 car le chef appr\u00e9cie particuli\u00e8rement de travailler avec cette plante aromatique qu\u2019il d\u00e9cline dans ses recettes de fa\u00e7on originale, et \u00e9galement car il est tout pr\u00e8s de la bourse \ud83d\ude09<\/p>\n<p>Apr\u00e8s m\u2019avoir install\u00e9e\u00a0; 3<sup>\u00e8me<\/sup> vendredi du mois de novembre oblige\u00a0; Julien m\u2019a propos\u00e9 de go\u00fbter son Beaujolais Nouveau, \u00e9labor\u00e9 par <strong>Christophe Pacalet<\/strong> \u00e0 Cerci\u00e9, et a su me convaincre d\u2019y go\u00fbter, moi qui ne suis vraiment pas fan de Beaujolais nouveau habituellement. Je dois dire que j\u2019ai \u00e9t\u00e9 tr\u00e8s agr\u00e9ablement surprise, tant par ses ar\u00f4mes fruit\u00e9s (mais sans additifs exotiques) que par sa rondeur et sa fra\u00eecheur en bouche<\/p>\n<p>J&rsquo;ai ensuite pu d\u00e9guster, successivement\u00a0:<\/p>\n<p><span style=\"text-decoration: underline\"><strong>Entr\u00e9es:<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-size: 0.9rem\">Tripes et poireaux au cidre, une des sp\u00e9cialit\u00e9s du chef, aussi original que savoureux.<\/span><\/li>\n<li>Saumon fum\u00e9 maison, oseille et cr\u00e8me citronnelle-vodka<\/li>\n<li>Saint Jacques en coquille avec une sauce citronn\u00e9e (Coquillage du moment)<\/li>\n<\/ul>\n<p>Accompagn\u00e9es d\u2019un Pouilly sur Loire 2014, de chez <strong>Guy Baudin<\/strong><\/p>\n<p><span style=\"text-decoration: underline\"><strong>Plats :<\/strong><\/span><\/p>\n<ul>\n<li>Blanquette de veau du limousin, en cocotte servie avec du riz de Camargue vapeur (une tuerie)<\/li>\n<li>Foie de veau r\u00f4ti au vinaigre de Xeres, pommes de terre Dauphine (croustillantes et moelleuses, un r\u00e9gal)<\/li>\n<\/ul>\n<p>Accompagn\u00e9es du Beaujolais Nouveau de chez\u00a0<strong> <a href=\"http:\/\/www.christophepacalet.com\/\">\u00a0Christophe Pacalet<\/a><\/strong>\u00a0\u00a0(et oui, je vous l\u2019ai dit, je l\u2019ai vraiment aim\u00e9)<\/p>\n<p><span style=\"text-decoration: underline\"><strong>Desserts :<\/strong><\/span><\/p>\n<ul>\n<li>Cr\u00e9meux au chocolat noir, sauce chicor\u00e9e<\/li>\n<li>\u0152uf \u00e0 la neige aux amandes caram\u00e9lis\u00e9es<\/li>\n<\/ul>\n<p>L\u00e0 non, je vous vois venir, je n\u2019ai rien bu \ud83d\ude09<\/p>\n<p>&nbsp;<\/p>\n<p>Je me suis r\u00e9gal\u00e9e et je suis vraiment tomb\u00e9e sous le charme, les prix sont tout \u00e0 fait corrects, une adresse \u00e0 noter sans aucun doute !<\/p>\n<p>NB\u00a0: Pour ceux d\u2019entre vous qui pensent que j\u2019ai beaucoup mang\u00e9, je
